Cheesy Chicken Pasta (Linda)
2c cooked macaroni2c cooked chicken, chopped
3/4c milk
1 can of cream of mushroom soup
1 can of cream of chicken soup
½ c grated cheese
Salt and pepper to taste
Put this in
a casserole dish and top with more cheese
Cook at 375
for 30 minutes (or until bubbly)
Pumpkin Cake (Janet)
2 cups white sugar
1 1/4 cups vegetable
oil
1 teaspoon vanilla
extract
2 cups canned pumpkin
4 eggs
2 cups all-purpose flour 3 teaspoons baking
powder
2 teaspoons baking
soda
1/4 teaspoon salt
2 teaspoons ground
cinnamon
1 cup chopped walnuts
(optional)
1. Preheat oven to 350
degrees F (175 degrees C). Grease and flour a 12x18 inch pan. Sift together the
flour, baking powder, baking soda, salt and cinnamon. Set
aside.
2. In a large bowl
combine sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a
time. Gradually beat in flour mixture. Stir in nuts. Spread batter into prepared
12x18 inch pan.
3. Bake in the preheated
oven for 30 minutes, or until a toothpick inserted into the center of the cake
comes out clean. Allow to cool.
My caramel frosting- I used ½ c butter and 2 cups icing
sugar whipped together and then I added a ½ cup of prepared caramel sauce and
beat until it was creamy.
Double
Chocolate Banana Muffins (Jean)
1½ cups all-purpose flour
1 cup sugar
¼ cup baking cocoa
½ tsp salt
1 tsp baking soda
¼ tsp baking powder
1 1/3 cup mashed bananas
1/3 cup vegetable oil
1 egg
1 cup (6oz) semi-sweet chocolate chips
Fill
greased or paper lined muffin cups ¾ full.
Bake at 350 for 20-25 minutes. (Mini tins bake 10-12 minutes.)
Makes 1 dozen
Skor Bar Squares (Those Damn Squares) By Marilyn's Mother
1 box of Ritz crackers
1 pkg milk Chocolate chips
1 pkg Skor chipits (toffee bits) Reserve some for top of squares
1 can Eagle Brand Sweetened condensed milk
2 tablespoons of oil
Crush crackers fine. This can be done by hand in the bag they come in.
In a bowl combine crumbs, skor chipits and can of sweetened condensed milk.
Mix well. Press firmly into a greased 9x9 pan.
In a saucepan combine chocolate chips and oil until chocolate chips have melted.
Spread this over the squares. Sprinkle with remaining skor chipits.
Keep refrigerated until ready to serve.
